Today we will combine the flavors of coconut & rooibos tea, mint & green tea and lemon and black tea and examine the flavor intensity after minutes, 4 hours, 12 hours and 24 hours of the pressure infusion process.
First let's examine the pressure infusion process and timing. Immediately after cold brewing, your sparkling tea will have a strong tea flavor and smell, but over time the color & flavor intensity increases. This is because your bottle is sealed and pressurized and continues to pressure infuse until you open it. We have found that the color and flavor intensity follows the 80/20 curve. After a few hours you get about 80% of the color change and flavor intensity possible. See below. That said, if you like a hint of coconut/mint/lemon don't use much or steep for very long because the pressure infusion flavors are surprisingly powerful.
Are you the tea bag sort or a loose leaf and tea ball type? You're good with either. If you use a tea ball detach the chain on the ball. To make the Coconut Infused Sparkling Rooibos Tea place the tea and a couple of hunks of coconut in the bottle, fill with cold filtered water. Place one carbonator in the carbonation chamber and water or a light simple syrup (to taste) in the flavor chamber. Push the button and create. The light nutty flavor of coconut blends smoothly with the earthy rooibos tea.
To make the Mint Infused Sparkling Green Tea place the tea and a sprig of mint in the bottle, fill with cold filtered water. Place one carbonator in the carbonation chamber and water or a light simple syrup (to taste) in the flavor chamber. Push the button and create. Refreshing mint brightens the green tea for a rounded beverage.
To make the Lemon Infused Sparkling Black Tea place the tea and a lemon segment in the bottle, fill with cold filtered water. Place one carbonator in the carbonation chamber and water or a light simple syrup (to taste) in the flavor chamber. Push the button and create. The infused taste of real lemon is incomparably better than the fake alternatives used in too many beverages. Don't get me started on "lemon" or "lime" Perrier.
