In late August gardens are brimming with tomatoes, cucumbers and herbs, so Dan has created the following bubbly, savoury vegetable cocktail. The flavours blend smoothly, the bubbles are subtle and these pictures make us want to sit on a dock immediately. Perfect for sipping on the last long weekend of the summer.
To prepare this Savoury Garden Cocktail, take some large tomatoes, 1/2 cup of water, 1 tablespoon lemon juice and 2 teaspoons salt. Puree these ingredients on high in the blender. Strain the puree in a fine mesh strainer into a bowl. Set this flavoured tomato juice aside until ready to use. Ideally chill it in the refrigerator.
When you're ready to make the drinks, fill the flavor chamber with the chilled flavored tomato juice. Keep the remainder for round two or three... Put some ice cubes, cucumber slices, lemon slices, basil leaves, celery leaves, a sprig of dill in the bottle and top up to the rim with cold water. Place a carbonator in the carbonation chamber, close up the bottle and the system. Push the button and watch your cocktail being created.
Remember that the vegetable flavours will continue to pressure infuse until you open the sealed bottle. If you can make this the night before, the flavours will get increasingly rich and complex. It is certainly delicious to drink right away as well. Take 4 tumblers, add 1 oz of vodka to each glass optionally a shot or two of tabasco and Worcestershire to each.
